A creamy, cheesy mac and cheese with smoky BBQ chicken, perfect for a comforting and flavorful meal.

Ingredients

Pasta

  • 12 oz elbow macaroni
  • Salt for boiling water Salt, for boiling water

Chicken

  • 2 cups cooked chicken breast, shredded
  • Β½ cup BBQ sauce (plus more to taste)

Cheese Sauce

  • 3 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1Β½ cups shredded sharp cheddar cheese
  • Β½ cup shredded mozzarella cheese
  • ΒΌ cup grated parmesan cheese

Seasonings

  • Β½ teaspoon garlic powder
  • Β½ teaspoon smoked paprika
  • Salt and black pepper to taste Salt and black pepper, to taste

Toppings

  • as desired Chopped green onions
  • as desired Extra BBQ sauce drizzle

Instructions 

  • Cook macaroni in salted boiling water until al dente, then drain.
  • Toss shredded chicken with BBQ sauce and set aside.
  • Melt butter, whisk in flour to make a roux, then gradually add milk and cook until thickened.
  • Stir in cheeses until melted, then season with garlic powder, paprika, salt, and pepper.
  • Combine cooked pasta with cheese sauce, fold in BBQ chicken, then serve topped with green onions and extra BBQ sauce if desired.

Notes

For extra flavor, add more BBQ sauce or green onions as desired.
