A quick and vibrant slaw combining kale, apples, and cabbage with a tangy dressing, perfect for a healthy meal in minutes.

Ingredients

Dressing

  • 0.25 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon dijon mustard
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon freshly ground black pepper

Main ingredients

  • 1 bunch kale (stems removed and leaves finely sliced)
  • 2 cups thinly sliced red cabbage
  • 2 carrots grated carrots
  • 2 apples peeled and cut into matchsticks

Instructions 

  • Combine oil, vinegar, maple syrup, mustard, salt, and pepper in a jar or blender. Shake or process to combine.
  • Remove kale leaves from stems, finely slice, and place in a large bowl.
  • Drizzle kale with oil, sprinkle with salt, and massage for 3-5 minutes.
  • Add cabbage, carrots, and apples to the bowl.
  • Pour dressing over the slaw and toss to combine. Serve immediately.

Notes

Massage the kale well for tender leaves and better flavor absorption.
