A quick and flavorful chicken fried rice recipe that mimics restaurant quality in just 20 minutes.

Ingredients

Rice and Vegetables

  • 2 cups Jasmine or long-grain rice (day-old) (preferably refrigerated)
  • 1 pound boneless chicken breast (cut into bite-sized pieces)
  • 2-3 large eggs (beaten with a pinch of salt)
  • 2 cloves garlic (minced)
  • 1 cup diced onions
  • 1 cup diced carrots
  • 1 cup green peas
  • 0.5 cup green onions (for garnish)
  • 1 bell pepper optional (diced)
  • 1 cup bean sprouts (optional)
  • 0.5 cup corn (optional)
  • 3 tablespoons light soy sauce
  • 1 tablespoon dark soy sauce (for color)
  • 2 teaspoons sesame oil
  • 0.5 teaspoon white pepper
  • to taste salt
  • 0.5 cup vegetable or canola oil
  • 1 teaspoon toasted sesame oil

Instructions 

  • Prepare rice and vegetables; rest chicken in soy sauce mixture for 20 minutes.
  • Scramble eggs in a hot wok, then remove.
  • Cook chicken in batches until golden, then set aside.
  • Add aromatics and vegetables, then stir-fry with rice and cooked chicken.
  • Mix in sauces, adjust seasoning, garnish with green onions, and serve.

Notes

Use day-old rice for best texture and quick cooking.
