Ingredients

Protein

  • 1 lb boneless, skinless chicken breast, diced

Legumes

  • 1 can (15 oz) chickpeas, drained and rinsed

Oils & Condiments

  • 1 tbsp olive oil

Spices & Herbs

  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Grains & Starches

  • 1 cup cooked quinoa

Vegetables

  • 1/2 cup diced cucumber
  • 1/2 cup cherry tomatoes, halved

Fruits & Juices

  • 2 tbsp lemon juice

Herbs

  • 2 tbsp chopped fresh parsley

Instructions 

  • Heat olive oil in a skillet over medium heat.
  • Add diced chicken and cook for 5-7 minutes until no longer pink.
  • Add chickpeas, garlic powder, paprika, cumin, salt, and pepper. Cook for 3 minutes.
  • Divide cooked quinoa between two bowls, top with chicken and chickpea mixture, add cucumber and tomatoes, then drizzle with lemon juice and sprinkle parsley.

Notes

For extra flavor, add a dash of your favorite herbs or spices.
