  • 1 large onion, thinly sliced
  • 2 bell peppers bell peppers, thinly sliced
  • 2 cups cooked, shredded chicken
  • 2 cups full-fat (4%) cottage cheese
  • 3 large eggs
  • 1 (1 oz) packet of fajita seasoning
  • 1.5 cups shredded Monterey Jack or cheddar cheese

Instructions 

  • Preheat oven to 375°F (190°C) and grease an 8×8-inch dish.
  • Sauté onions and peppers in olive oil for 10-15 minutes; cool slightly.
  • Whisk cottage cheese and eggs; stir in fajita seasoning and 1 cup cheese.
  • Fold in chicken, peppers, and onions; pour into dish; top with remaining cheese.
  • Bake for 30-35 minutes until bubbly and golden.

Notes
