A quick and flavorful homemade chicken fried rice perfect for a weeknight dinner, ready in just 30 minutes.
Ingredients
For the Fried Rice

cooked rice (preferably cold, day-old rice works best)
1
lb
boneless, skinless chicken breasts, diced
2
tbsp
vegetable oil (divided)
1
small
onion, diced
1
cup
frozen peas and carrots mix (thawed)

eggs, lightly beaten
3
green onions
sliced
For the Sauce
3
tbsp
soy sauce (or tamari for gluten-free)
1
tbsp
oyster sauce (optional but recommended)
1
tsp
sesame oil
2
cloves
garlic, minced
½
tsp
grated fresh ginger

tsp
black pepper
Instructions
Heat 1 tablespoon of oil in a large skillet. Cook chicken for 5–7 minutes until browned. Remove and set aside.
Add remaining oil, sauté diced onion for 2–3 minutes.
Add garlic, ginger, peas, and carrots; cook 1–2 minutes.
Push vegetables aside, scramble eggs in the pan.
Add rice, stir-fry, then return chicken to the pan.
Mix soy sauce, oyster sauce, sesame oil, and black pepper; pour over rice and toss.
Notes
Use cold, day-old rice for best results and quick stir-frying.
