Ingredients

Meat

  • 1 lb sirloin steak

Grains

  • 1 cup uncooked rice (white or brown)

Broth

  • 2 cups beef broth for cooking rice

Aromatics

  • 4 cloves garlic, minced

Herbs & Citrus

  • 1 lemon lemon zest and juice

Oils & Seasonings

  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Salt & Pepper

  • Salt and pepper, to taste

Garnish & Serve

  • Fresh parsley, chopped
  • Lemon slices for serving

Instructions 

  • Pat the steak dry, season with salt, pepper, half of the herbs, and half of the dried oregano and thyme.
  • Bring beef broth to a boil, add rice, cover, and simmer for 15-20 minutes until cooked.
  • Heat 2 tablespoons of olive oil in a skillet, sear the steak 4-5 minutes per side, then rest.
  • In the same skillet, add remaining olive oil, garlic, herbs, sauté 30 seconds, then add lemon juice and zest, cook 1 minute.
  • Fluff cooked rice, mix into skillet with garlic and lemon, season as needed, then serve topped with sliced steak, parsley, and lemon slices.
