A quick and flavorful Szechuan chicken dish with bold spices and vibrant vegetables, perfect for a weeknight dinner.

Ingredients

Protein

  • 1 lb chicken breast, cut into bite-sized pieces

Dry ingredients

  • 2 tablespoons cornstarch

Oils and sauces

  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon chili garlic sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon sugar

Vegetables

  • 0.5 red bell pepper red bell pepper, sliced
  • 0.5 green bell pepper green bell pepper, sliced
  • 2 green onions green onions, sliced

Spices

  • 1 teaspoon Szechuan peppercorns (crushed) or black pepper

Garnishes and extras

  • Optional peanuts or cashews for garnish
  • Steamed rice or noodles, for serving Steamed rice or noodles

Instructions 

  • Toss chicken with cornstarch and salt. Stir-fry in oil until golden, then set aside.
  • Stir-fry garlic, ginger, and Szechuan peppercorns for 30 seconds. Add bell peppers and cook 2-3 minutes.
  • Return chicken to pan. Add soy sauce, vinegar, chili sauce, hoisin, sesame oil, sugar, and green onions. Cook 2-3 minutes until thickened.
  • Adjust salt if needed. Serve hot over rice or noodles, garnished with nuts and extra green onions.

Notes

For extra flavor, sprinkle with chopped peanuts or cashews before serving.
