This quick and flavorful teriyaki chicken bowl combines tender chicken, fresh vegetables, and a spicy mayo for a satisfying meal in just 30 minutes.

Ingredients

Protein

  • 1.5 lb boneless, skinless chicken thighs
  • 1 cup teriyaki sauce
  • 1 tablespoon vegetable oil

Grains

  • 2 cups cooked white rice

Vegetables

  • 2 cups broccoli florets, steamed
  • 1 cup shredded carrots
  • 1 ripe avocado, sliced

Sauces & Condiments

  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds

Instructions 

  • Heat vegetable oil in a skillet over medium-high heat.
  • Add chicken thighs and cook for 4–5 minutes per side until fully cooked and slightly crispy. Pour teriyaki sauce over the chicken and simmer for 2–3 minutes until thick.
  • Remove chicken, slice into strips, and prepare spicy mayo by mixing mayonnaise, sriracha, and sesame oil.
  • Assemble bowls with rice, broccoli, carrots, and avocado. Top with chicken, drizzle with spicy mayo, and sprinkle sesame seeds.

Notes

For extra flavor, marinate the chicken in some teriyaki sauce beforehand.
