A quick and flavorful dish combining tender shredded chicken with pesto and pasta, all cooked in the slow cooker for convenience.
Ingredients
Protein

pounds
boneless, skinless chicken breasts (or thighs)
1
cup
jarred basil pesto (about 8 ounces)
1
cup
chicken broth (low sodium if possible)
12
ounces
pasta (penne, rotini, or your favorite short pasta)
Instructions
Place chicken in slow cooker in an even layer.
Whisk pesto and chicken broth, then pour over chicken.
Cook on LOW for 4–6 hours or HIGH for 2.5–3.5 hours until cooked through.
Shred chicken in the slow cooker, then stir into pesto sauce.
Cook pasta until al dente, reserve 1/2 cup pasta water, then drain.
Add pasta to slow cooker, toss with chicken and sauce, loosen with pasta water if needed. Serve warm with optional Parmesan and lemon.
Notes
For extra flavor, top with grated Parmesan and a squeeze of lemon before serving.
