Ingredients

Seasonings

  • 1 tablespoon Cajun or Creole seasoning

Seafood

  • 24 pieces cleaned and peeled extra jumbo shrimp

Sausage

  • 6 ounces fully cooked Turkey/Chicken Andouille sausage or kielbasa (sliced)

Vegetables

  • 8 ounces medium zucchini, sliced into 1/4-inch thick half moons
  • 8 ounces medium yellow squash, sliced into 1/4-inch thick half moons
  • 1 large red bell pepper, seeded and cut into thin 1-inch pieces
  • 0.25 teaspoon kosher salt
  • 2 tablespoons olive oil

Instructions 

  • Combine Cajun seasoning and shrimp, toss to coat.
  • Add sausage, zucchini, squash, bell peppers, salt, and oil; toss well.
  • Preheat air fryer to 400°F (200°C).
  • Cook in 2 batches for 8 minutes, shaking halfway.
  • Return first batch to air fryer and cook 1 minute.

Notes

Adjust seasoning to taste and serve hot.
