Instructions
Peel, seed, and shred the cucumber; set aside.
Whisk yogurt, mint, lemon juice, 2 minced garlic cloves, 1/4 tsp salt, and 1/4 tsp pepper to make sauce. Reserve 1/3 cup for serving.
Combine lamb, beef, remaining garlic, salt, pepper, and 1/3 cup yogurt mixture; knead until well mixed. Form into 8 cylinders.
Preheat air fryer to 400°F (200°C). Cook kofta for 8 minutes, flip, then cook 4-6 more minutes until browned and internal temp reaches 160°F (71°C).
Mix shredded cucumber into reserved yogurt sauce. Serve kofta on flatbreads with lettuce, tomato, onion, and drizzle with sauce.
Notes
Using a food scale helps ensure evenly sized kofta balls for consistent cooking.
