Ingredients

Protein

  • 1 pound Raw shrimp (thawed)

Vegetables

  • 1/2 red bell pepper Red Bell Pepper (sliced)
  • 1/2 green bell pepper Green Bell Pepper (sliced)
  • 1/2 yellow onion Yellow onion (sliced)

Seasonings & Oils

  • 1 tablespoon Olive Oil (divided)
  • 2 tablespoons Fajita seasoning (divided, adjust to taste)

Tortillas

  • 8 mini taco-sized tortillas Tortillas

Sauces & Garnishes

  • Avocado Cilantro Sauce
  • Lime slices
  • Cilantro (for garnish)

Instructions 

  • Preheat the air fryer to 380°F (190°C).
  • Mix bell peppers and onions with 1/2 tablespoon olive oil and 1 tablespoon fajita seasoning.
  • Air fry veggies for 3 minutes at 380°F.
  • Season shrimp with remaining olive oil and fajita seasoning, then add to the air fryer basket.
  • Cook shrimp for 6 minutes at 380°F, flipping halfway. Serve with tortillas, sauce, lime, and cilantro.
