Delicious gluten-free cookies made with almond flour and dark chocolate chips, perfect for a quick treat.

Ingredients

Dried ingredients

  • 1 cup coconut sugar
  • 2 eggs eggs (room temperature)
  • cup dark chocolate chips (for melting)
  • 3 tbsp coconut oil
  • 2 cups almond flour
  • 1 tsp vanilla extract
  • cup cocoa powder
  • 1 tsp baking soda
  • ½ cup dark chocolate chips (for folding in)

Instructions 

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix eggs and coconut sugar until frothy. Melt chocolate chips and coconut oil, then combine with the mixture.
  • Add almond flour, cocoa powder, vanilla, and baking soda; stir into a thick batter. Fold in remaining chocolate chips.
  • Drop tablespoon-sized dough balls onto the prepared pan, spacing at least 3 inches apart.
  • Bake for 8-10 minutes, then cool on the pan for 10 minutes before transferring to a rack.

Notes

For softer cookies, bake for 8 minutes; for crunchier edges, bake closer to 10 minutes.
