Delicious gluten-free cookies made with almond flour and dark chocolate chips, perfect for a quick treat.

Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Mix eggs and coconut sugar until frothy. Melt chocolate chips and coconut oil, then combine with the mixture.
Add almond flour, cocoa powder, vanilla, and baking soda; stir into a thick batter. Fold in remaining chocolate chips.
Drop tablespoon-sized dough balls onto the prepared pan, spacing at least 3 inches apart.
Bake for 8-10 minutes, then cool on the pan for 10 minutes before transferring to a rack.
Notes
For softer cookies, bake for 8 minutes; for crunchier edges, bake closer to 10 minutes.
