A quick and flavorful chicken fried rice recipe that comes together in just 20 minutes, perfect for a satisfying weeknight dinner.

Ingredients

Rice and Proteins

  • 2 cups cooked, cold white rice (day-old rice is best)
  • 1 pound boneless, skinless chicken breast (cut into bite-sized pieces)
  • 2 tablespoons soy sauce (for marinating chicken)
  • 1 tablespoon vegetable oil
  • 1 tablespoon butter
  • 0.5 cup frozen peas and carrots mix
  • 2 large eggs (lightly beaten)
  • 2 cloves garlic (minced)
  • 1 teaspoon grated fresh ginger
  • 3 tablespoons soy sauce (for stir-frying)
  • 1 tablespoon oyster sauce (optional) (for deeper flavor)
  • 1 teaspoon sesame oil

Seasonings

Instructions 

  • Marinate chicken in 2 tbsp soy sauce for 10 minutes.
  • Cook chicken in 1/2 tbsp oil until browned; set aside.
  • Cook peas and carrots in butter and remaining oil for 2 minutes; set aside.
  • Scramble eggs in the skillet, then add garlic and ginger; cook 30 seconds.
  • Add rice, stir-fry 3-4 minutes, then return chicken and vegetables. Add soy sauces, oyster sauce, salt, pepper; toss to combine.
  • Stir in sesame oil before serving. Taste and adjust seasonings.

Notes

Use day-old rice for best texture and flavor.
