A quick and flavorful chicken fried rice recipe that comes together in just 20 minutes, perfect for a satisfying weeknight dinner.

cooked, cold white rice
(day-old rice is best)

boneless, skinless chicken breast
(cut into bite-sized pieces)

soy sauce (for marinating chicken)

vegetable oil

Instructions
Marinate chicken in 2 tbsp soy sauce for 10 minutes.
Cook chicken in 1/2 tbsp oil until browned; set aside.
Cook peas and carrots in butter and remaining oil for 2 minutes; set aside.
Scramble eggs in the skillet, then add garlic and ginger; cook 30 seconds.
Add rice, stir-fry 3-4 minutes, then return chicken and vegetables. Add soy sauces, oyster sauce, salt, pepper; toss to combine.
Stir in sesame oil before serving. Taste and adjust seasonings.
Notes
