Delight in these homemade strawberry oatmeal bars with a buttery crumb topping, perfect for a sweet treat or dessert.

Instructions
Preheat oven to 350°F (175°C). Line an 8x8-inch dish with parchment.
Mash strawberries, stir in sugar, lemon juice, and cornstarch; boil, simmer until thickened, then cool 10 minutes.
Mix oats, flour, butter, salt, baking soda, and brown sugar until crumbly.
Press most of the oat mixture into the dish, spread strawberry filling over it, then sprinkle remaining crumb on top.
Bake for 30-40 minutes until golden and bubbling, then cool before slicing.
Notes
Chill the bars before serving for best texture.
