Ingredients

Fruits

  • 2 cups fresh strawberries, washed and hulled
  • 1 3/4 cups granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract

Oats and Flour

  • 1 cup rolled oats
  • 3/4 cup all purpose flour
  • 1/2 cup butter, softened
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking soda
  • 2/3 cup brown sugar

Instructions 

  • Preheat oven to 350°F (175°C). Line an 8x8-inch dish with parchment.
  • Mash strawberries, stir in sugar, lemon juice, and cornstarch; boil, simmer until thickened, then cool 10 minutes.
  • Mix oats, flour, butter, salt, baking soda, and brown sugar until crumbly.
  • Press most of the oat mixture into the dish, spread strawberry filling over it, then sprinkle remaining crumb on top.
  • Bake for 30-40 minutes until golden and bubbling, then cool before slicing.

Notes

Chill the bars before serving for best texture.
