Ingredients

Protein

  • 4 medium chicken breasts (boneless & skinless) (about 16 ounces)
  • to taste Kosher salt and pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil (or avocado oil)

Fruits

  • 1 large apple (or 2 medium)
  • 1 tablespoon fresh lemon juice

Dairy

  • 6 ounces brie cheese (sliced)

Herbs

  • to garnish fresh thyme

Instructions 

  • Preheat oven to 400°F (200°C).
  • Cut chicken breasts lengthwise, season with salt, pepper, onion powder, garlic powder, oregano, and olive oil.
  • Sear chicken in a skillet over medium-high heat for 3 minutes per side; set aside.
  • Core and thinly slice the apple, then toss with lemon juice. Stuff chicken with apple slices and brie, secure with toothpicks.
  • Bake for 15-20 minutes until internal temperature reaches 165°F. Garnish with thyme.

Notes

Use toothpicks to secure the stuffed chicken if needed.
