Instructions
Make apple pie filling: cook diced apples with butter, brown sugar, and cinnamon until softened and thickened, then set aside.
Prepare pancake batter: mix egg, melted butter, sugar, vanilla, and yogurt; fold in flour, baking powder, baking soda, and diced apples; let rest 30 minutes.
Heat skillet over medium, add butter, then pour ⅓ cup batter; cook until bubbles form, flip, and cook until golden.
Repeat until all batter is used, stacking pancakes as cooked.
Top pancakes with apple filling and optional maple syrup before serving.
Notes
For extra flavor, add a sprinkle of powdered sugar or a dollop of whipped cream.
