Delight in these flaky hand pies filled with sweet apples and sharp cheddar, perfect for a cozy treat or dessert.

Ingredients

Dough

  • 2 1/2 cups Bob's Red Mill Organic Unbleached All Purpose White Flour
  • 3 Tbsp Sugar
  • 1 tsp Salt
  • 1 1/4 cups shredded Sharp Cheddar Cheese (used in photo: Sharp White Cheddar, hand-grated)
  • 2/3 cup Butter (chilled and cut into tablespoons)
  • 1 Tbsp Apple Cider Vinegar
  • 1/2 cup Ice Water
  • 1 lb Apples peeled and chopped to 1/4-inch cubes
  • 1/4 cup Packed Brown Sugar
  • 1/2 Tbsp Lemon Zest
  • 1 Tbsp Lemon Juice
  • 1 tsp Cinnamon or Pumpkin Spice Mix
  • 1 Tbsp Tapioca Starch
  • 1 Egg plus 1 Tbsp Water Egg wash

Optional

  • as needed Sparkling Sugar (optional)

Instructions 

  • Pulse flour, sugar, and salt in a food processor. Add butter and cheese, pulse until pea-sized. Mix in vinegar and ice water, adding more if needed. Divide dough, chill for 1 hour.
  • Peel, core, and chop apples. Mix with sugar, lemon zest, juice, cinnamon, and tapioca. Refrigerate until ready to assemble.
  • Preheat oven to 375°F. Roll out dough, cut into rounds, fill with apple mixture, seal, and cut small slits. Brush with egg wash and sprinkle with sugar. Bake for 23-25 minutes until golden.

Notes

Chill the dough thoroughly for best results and ensure even sealing of the pies.
