1 1/4cupsshredded Sharp Cheddar Cheese(used in photo: Sharp White Cheddar, hand-grated)
2/3cupButter(chilled and cut into tablespoons)
1TbspApple Cider Vinegar
1/2cupIce Water
1lbApples peeled and chopped to 1/4-inch cubes
1/4cupPacked Brown Sugar
1/2TbspLemon Zest
1TbspLemon Juice
1tspCinnamon or Pumpkin Spice Mix
1TbspTapioca Starch
1Egg plus 1 Tbsp WaterEgg wash

Instructions
Pulse flour, sugar, and salt in a food processor. Add butter and cheese, pulse until pea-sized. Mix in vinegar and ice water, adding more if needed. Divide dough, chill for 1 hour.
Peel, core, and chop apples. Mix with sugar, lemon zest, juice, cinnamon, and tapioca. Refrigerate until ready to assemble.
Preheat oven to 375°F. Roll out dough, cut into rounds, fill with apple mixture, seal, and cut small slits. Brush with egg wash and sprinkle with sugar. Bake for 23-25 minutes until golden.
