Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil or butter

Vegetables

  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 apples apples (such as Fuji or Gala), cored and sliced

Herbs & Liquids

  • 1 teaspoon fresh thyme leaves, plus more for garnish
  • 0.5 cup chicken broth
  • 0.5 cup heavy cream or half-and-half
  • 1 tablespoon Dijon mustard (optional)
  • 1 tablespoon apple cider vinegar or lemon juice (optional)

Instructions 

  • Season chicken with salt and pepper.
  • Cook chicken in hot oil until golden and cooked through, then set aside.
  • Sauté onions until translucent, then add garlic, apples, and thyme; cook until apples soften.
  • Pour in broth, stir in cream and mustard, simmer to combine.
  • Return chicken to skillet, simmer briefly, then add vinegar or lemon juice if desired. Garnish and serve.

Notes

For extra flavor, garnish with additional thyme leaves before serving.
