Instructions
Simmer apple cider until reduced to 2 tablespoons, then cool.
Beat cream cheese, sugar, and vanilla; freeze small portions for 1–2 hours.
Mix dry ingredients; beat butter, sugars, egg yolks, vanilla, and cider reduction; combine with dry ingredients.
Wrap dough around frozen cheesecake balls, then coat in spiced sugar.
Bake at 350°F (175°C) for 11–13 minutes; cool and brush with melted butter, then sprinkle with spiced sugar.
Notes
Ensure the cheesecake filling is frozen solid for easier stuffing.
