Delight in these soft cookies filled with a creamy cheesecake center and infused with warm spices and apple cider reduction for a cozy treat.

Ingredients

Apple Cider Reduction

  • 2 cups apple cider

Cheesecake Filling

  • 6 oz cream cheese, cold
  • 3 tbsp granulated white sugar
  • 1/2 tsp vanilla

Apple Cider Cookies

  • 1 3/4 cups all-purpose flour, spooned and leveled
  • 2 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated white sugar
  • 2 egg yolks at room temperature
  • 2 tsp vanilla
  • 2 tbsp apple cider reduction (from above)

Spiced Sugar

  • 1/4 cup granulated white sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • Pinch ground allspice
  • 1–2 tbsp salted butter, melted

Instructions 

  • Simmer apple cider until reduced to 2 tablespoons, then cool.
  • Beat cream cheese, sugar, and vanilla; freeze small portions for 1–2 hours.
  • Mix dry ingredients; beat butter, sugars, egg yolks, vanilla, and cider reduction; combine with dry ingredients.
  • Wrap dough around frozen cheesecake balls, then coat in spiced sugar.
  • Bake at 350°F (175°C) for 11–13 minutes; cool and brush with melted butter, then sprinkle with spiced sugar.

Notes

Ensure the cheesecake filling is frozen solid for easier stuffing.
