Instructions
Meltdown and cool the butter until amber; reserve 1 cup and 2 tbsp for the dough and topping.
Simmer 1 cup apple cider until reduced to ¼ cup; cool.
Mix dry ingredients: flour, baking powder, baking soda, salt, cinnamon, nutmeg.
Whisk cooled browned butter, reduced cider, sugars, vanilla, egg, and apple sauce until smooth.
Fold dry ingredients into wet to form dough; scoop onto parchment-lined sheets.
Bake at 350°F (175°C) for 13-15 minutes; cool before serving.
Notes
Ensure not to over-mix the dough for tender cookies.
