A delicious and easy breakfast featuring warm apples, cinnamon, and melted cheese folded into crispy tortillas.
Ingredients

2mediumapples(diced and peeled)
2tablespoonsbrown sugar
0.5teaspoonground cinnamon
1.5tablespoonsbutter(divided use)
1cupshredded mozzarella cheese
48-inchflour tortillas
Optional toppings
maple syrup or powdered sugar(for serving)
Instructions
Peel, core, and dice the apples. In a skillet, melt 1 tablespoon of butter over medium heat. Add apples, brown sugar, and cinnamon; cook until soft and caramelized, about 6-8 minutes.
Lay out tortillas, sprinkle 1/4 cup of cheese on half of each. Spoon apple mixture over cheese, then fold tortillas in half.
Wipe skillet, melt remaining 1/2 tablespoon of butter, and cook folded tortillas 2-3 minutes per side until golden brown.
Slice and serve with optional maple syrup or powdered sugar.
Notes
For extra flavor, add a sprinkle of cinnamon on top before serving.
