Instructions
Preheat oven to 425°F (220°C). Line muffin pan with liners or grease.
Mix dry ingredients in a bowl. Beat sugar and butter, add eggs, sour cream, applesauce, vanilla; combine.
Combine wet and dry, fold in diced apples. Prepare topping mixture and cut in butter.
Divide batter into muffin cups, sprinkle with topping. Bake at 425°F for 5 mins, then reduce to 350°F and bake 15-18 mins.
Cool muffins in pan 5 mins, then transfer to wire rack to cool completely. Enjoy!
Notes
For extra flavor, add a sprinkle of cinnamon sugar on top before baking.
