Delicious moist muffins packed with fresh apples and warm cinnamon, perfect for breakfast or a snack.

Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 0.5 teaspoons salt

Wet Ingredients

  • 0.5 cup unsalted butter
  • 0.5 cup brown sugar, packed
  • 0.25 cup granulated sugar
  • 2 large eggs
  • 0.5 cup sour cream
  • 0.33 cup unsweetened applesauce
  • 1 teaspoon vanilla extract

Additional Ingredients

  • 2 cups peeled apples, diced
  • 0.5 cup brown sugar
  • 0.75 cup all-purpose flour
  • 1 teaspoon cinnamon
  • 0.25 cup unsalted butter, softened

Instructions 

  • Preheat oven to 425°F (220°C). Line muffin pan with liners or grease.
  • Mix dry ingredients in a bowl. Beat sugar and butter, add eggs, sour cream, applesauce, vanilla; combine.
  • Combine wet and dry, fold in diced apples. Prepare topping mixture and cut in butter.
  • Divide batter into muffin cups, sprinkle with topping. Bake at 425°F for 5 mins, then reduce to 350°F and bake 15-18 mins.
  • Cool muffins in pan 5 mins, then transfer to wire rack to cool completely. Enjoy!

Notes

For extra flavor, add a sprinkle of cinnamon sugar on top before baking.
