Ingredients

  • 1 medium apple (peeled and diced)
  • 2 Tbsp water
  • 1 tsp ground cinnamon
  • 1 scoop vanilla protein powder
  • 0.25 cup old fashioned oats
  • 2 Tbsp coconut flour
  • 0.5 tsp baking powder
  • 0.5 tsp ground ginger
  • 0.25 tsp ground nutmeg
  • 4 large egg whites
  • 0.5 cup unsweetened applesauce
  • 0.25 cup unsweetened almond milk

Instructions 

  • Cook diced apples with water and cinnamon until soft, about 5-6 minutes.
  • Preheat griddle and spray with nonstick spray.
  • Mix dry ingredients in a bowl, then add egg whites, applesauce, and almond milk; stir until combined.
  • Scoop batter onto griddle and cook 2-3 minutes per side until golden and bubbles form.
  • Top with diced apples and serve immediately.

Notes
