Ingredients

Dough

  • 3 cups all purpose flour
  • 0.25-0.5 cup sugar (adjust to taste)
  • 1 teaspoon salt
  • 2 teaspoons cinnamon powder
  • 1 tablespoon lemon zest (optional)
  • 8 ounces unsalted butter (cut into small chunks)
  • 2 eggs eggs
  • 2-4 tablespoons milk (add as needed)

Filling

  • 4 apples apples, cored and diced
  • 4 tablespoons brown sugar
  • 2 teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • 0.5 lemon juice of ½ lemon
  • 2 tablespoons melted butter (for brushing)
  • 4 tablespoons sugar (for sprinkling)
  • 2 teaspoons ground cinnamon (for sprinkling)

Instructions 

  • Mix flour, salt, sugar, cinnamon, and lemon zest in a food processor.
  • Add butter, pulse until combined, then add eggs and milk to form dough. Chill for 30 minutes.
  • Prepare apple filling by mixing diced apples with sugar, cinnamon, lemon juice, and vanilla. Chill until ready.
  • Roll out dough, cut into rounds, fill with apple mixture, fold, and seal edges.
  • Refrigerate empanadas for 30 minutes, then bake at 375°F (190°C) for 20-25 minutes until golden. Brush with melted butter and sprinkle cinnamon sugar before serving.

Notes

Chill the dough well for best results and ensure empanadas are refrigerated before baking for a flaky crust.
