Ingredients

Dry Ingredients

  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup sugar
  • 2 teaspoons cinnamon

Wet Ingredients

  • 2 eggs eggs
  • 1 cup milk
  • 1 teaspoon vanilla

Fruits

  • 2 cups peeled and chopped apples

Glaze

  • 1-1/2 cups powdered sugar
  • 3 tablespoons milk

Instructions 

  • Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  • In a large bowl, whisk together flour, baking powder, salt, sugar, and cinnamon.
  • In another bowl, beat eggs, milk, and vanilla. Add chopped apples and mix well.
  • Combine wet ingredients with dry ingredients until just mixed. Divide batter among muffin cups.
  • Bake for 20 minutes or until a toothpick inserted in the center comes out clean. Let cool slightly.
  • Mix powdered sugar and milk to make glaze. Drizzle over muffins before serving.

Notes

For extra flavor, add a pinch of nutmeg or cloves to the batter.
