Instructions
Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
In a large bowl, whisk together flour, baking powder, salt, sugar, and cinnamon.
In another bowl, beat eggs, milk, and vanilla. Add chopped apples and mix well.
Combine wet ingredients with dry ingredients until just mixed. Divide batter among muffin cups.
Bake for 20 minutes or until a toothpick inserted in the center comes out clean. Let cool slightly.
Mix powdered sugar and milk to make glaze. Drizzle over muffins before serving.
Notes
For extra flavor, add a pinch of nutmeg or cloves to the batter.
