A rustic and delicious apple galette with warm spices and a flaky crust, perfect for a cozy dessert.

Ingredients

Filling

  • 4 cups peeled, sliced apples (about 3 medium apples)
  • 1/4 cup brown sugar (firmly packed)
  • 1 tablespoon lemon juice
  • 1 tablespoon all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon allspice
  • 1/8 teaspoon cardamom
  • large pinch salt

Dough

  • 1 piece pastry for a 9-inch single crust pie
  • 1 large egg
  • 1 tablespoon water
  • 2 tablespoons unsalted butter (cut into small cubes)
  • to taste coarse sugar (such as sparkling or turbinado sugar)

Instructions 

  • Preheat oven to 375°F (150°C). Line a baking sheet with parchment or silicone liner.
  • Mix sliced apples with sugar, lemon juice, flour, spices, and salt.
  • Roll pastry into a 13-inch circle, transfer to prepared pan, and arrange apple filling inside, leaving a 2-inch border.
  • Fold edges over filling, pleating as needed. Brush with egg wash, sprinkle with coarse sugar, and dot with butter.
  • Bake for 35-40 minutes until golden and bubbly. Cool slightly before serving.

Notes

For best results, use firm apples like Fuji or Honeycrisp.
