A moist and flavorful apple spice cake infused with warm spices and topped with a sweet glaze and pecans.

Ingredients

Dough

  • 1 cup unsalted butter, softened
  • 1 1/4 cup brown sugar
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange extract
  • 2 large eggs
  • 1/4 cup unsweetened applesauce
  • 3 cups all purpose flour
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 3/4 teaspoon ground star anise
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3 cups shredded apples

Glaze

  • 1 cup powdered sugar
  • 1 tablespoon apple juice or cider
  • 1/2 teaspoon orange extract
  • 1 tablespoon heavy cream
  • 1/2 teaspoon vanilla extract
  • 1/2 cup chopped pecans

Instructions 

  • Preheat oven to 350°F (175°C). Spray a bundt pan with nonstick spray.
  • Beat butter and sugar until creamy. Add sour cream, extracts, eggs, and applesauce; mix well.
  • Gradually add dry ingredients and mix until combined. Gently fold in shredded apples.
  • Pour batter into prepared pan and bake for 50-55 minutes. Cool in pan 10 minutes, then invert and cool completely.
  • Whisk glaze ingredients and spoon over cooled cake. Sprinkle with pecans and let set.

Notes

For best results, use fresh apples and ensure ingredients are at room temperature.
