Ingredients

Meat

  • 3 lb boneless, skinless chicken thighs
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp turmeric
  • 1 tsp sugar
  • 2 tbsp tomato paste
  • 1 tbsp olive oil
  • 1/2 cup mayonnaise
  • 1/2 cup plain yogurt
  • 5 cloves garlic, minced
  • 1/2 lemon juice of 1/2 lemon

Optional toppings

  • Flatbreads or pita bread for serving (optional)
  • thinly sliced red onion (optional)
  • chopped parsley (optional)
  • sliced tomatoes (optional)
  • cucumber slices (optional)

Instructions 

  • Prepare the marinade: Mince garlic, combine with tomato paste, olive oil, lemon juice, and spices. Whisk until smooth.
  • Marinate the chicken: Coat chicken with marinade, refrigerate for at least 4 hours.
  • Cook the chicken: Pan-fry for 5-7 minutes per side or bake at 400°F for 20-25 minutes.
  • Make the garlic yogurt sauce: Mix mayonnaise, yogurt, minced garlic, lemon juice, salt, and pepper.
  • Assemble the wraps: Slice chicken, spread sauce on flatbread, add chicken and optional toppings, then roll up.

Notes
