Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts

Cooking Fat

  • 2 tbsp olive oil or butter

Vegetables & Fruits

  • 1 large onion, thinly sliced
  • 2 apples apples, thinly sliced

Liquids

  • 1 cup apple cider
  • ½ cup chicken broth

Herbs & Spices

  • 1 tsp fresh thyme leaves (or ½ tsp dried thyme)
  • to taste Salt & black pepper Salt & black pepper

Instructions 

  • Season chicken with salt and pepper.
  • Heat oil or butter in skillet, sear chicken 3–4 mins per side, then set aside.
  • Add onions to skillet, cook 3–4 mins until softened.
  • Stir in apples, cook 2–3 mins, then pour in cider and broth, scraping browned bits.
  • Add thyme, return chicken, simmer 8–10 mins until cooked and sauce thickens.

Notes

Serve hot over mashed potatoes or rice for a complete fall-inspired meal.
