Instructions
Toast walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant. Let cool.
Whisk Greek yogurt, maple syrup, apple cider vinegar, olive oil, Dijon mustard, salt, and pepper to make the dressing.
Core and chop apples, thinly slice red onion, and chop parsley.
Combine greens, apples, walnuts, cranberries, onion, and parsley in a large bowl. Toss gently.
Drizzle dressing over the salad and toss to coat. Garnish with extra cranberries and walnuts. Serve immediately.
Notes
