A vibrant and crunchy apple salad featuring toasted walnuts, dried cranberries, and a creamy maple dressing—perfect for fall gatherings.

Ingredients

Fruits and Nuts

  • 3 large crisp apples (like Honeycrisp), cored and chopped
  • 1 cup walnuts, toasted and roughly chopped
  • 3/4 cup dried cranberries
  • 1/2 small red onion, thinly sliced
  • 4 cups mixed greens or baby spinach
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup Greek yogurt
  • 3 tablespoons maple syrup
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions 

  • Toast walnuts in a dry skillet over medium heat for 3-4 minutes until fragrant. Let cool.
  • Whisk Greek yogurt, maple syrup, apple cider vinegar, olive oil, Dijon mustard, salt, and pepper to make the dressing.
  • Core and chop apples, thinly slice red onion, and chop parsley.
  • Combine greens, apples, walnuts, cranberries, onion, and parsley in a large bowl. Toss gently.
  • Drizzle dressing over the salad and toss to coat. Garnish with extra cranberries and walnuts. Serve immediately.

Notes

For extra crunch, add sliced almonds or a sprinkle of feta cheese.
