Ingredients

  • 2 pieces ripe avocados (diced)
  • 2 cups fresh or canned corn (drained)
  • 1 cup cherry tomatoes (halved)
  • 0.75 cup red onion (diced)
  • 2 tablespoons fresh cilantro (chopped)
  • 1 piece lime (juiced)
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin

Instructions 

  • Dice the avocados, halve the cherry tomatoes, and finely chop the onion and cilantro.
  • In a small bowl, whisk together lime juice, olive oil, ground cumin, salt, and pepper.
  • Gently toss corn, cherry tomatoes, red onion, and cilantro with the dressing in a large bowl.
  • Carefully fold in the diced avocado, ensuring it is well-coated.
  • Serve immediately or refrigerate for up to 4 hours.

Notes
