Instructions
Soak rice paper sheets in warm water until soft.
Cook vermicelli noodles according to package instructions, then drain and set aside.
Slice avocado, mango, cherry tomatoes, and red onion thinly.
Place ingredients on soaked rice paper, add herbs, lime juice, salt, and pepper, then roll tightly.
Repeat with remaining ingredients and serve fresh.
Notes
For extra flavor, add a dipping sauce like hoisin or peanut sauce.
