Fresh and vibrant, these avocado spring rolls are perfect for a light, healthy snack or appetizer.

Ingredients

Rice paper sheets

  • 10 sheets Rice paper sheets (guide to all types)

Vermicelli noodles

  • 1 oz Vermicelli noodles

Avocado

  • 1 pcs Avocado

Mango

  • 3.5 oz Mango

Cherry tomatoes

  • 3 oz Cherry tomatoes

Red onion

  • ¼ medium Red onion

Garlic

  • 1 clove Garlic

Freshly chopped cilantro

  • 1 Tbsp Freshly chopped cilantro

Lime juice

  • 1 Tbsp Lime juice

Salt

  • ½ tsp Salt

Black pepper

  • ¼ tsp Black pepper

Instructions 

  • Soak rice paper sheets in warm water until soft.
  • Cook vermicelli noodles according to package instructions, then drain and set aside.
  • Slice avocado, mango, cherry tomatoes, and red onion thinly.
  • Place ingredients on soaked rice paper, add herbs, lime juice, salt, and pepper, then roll tightly.
  • Repeat with remaining ingredients and serve fresh.

Notes

For extra flavor, add a dipping sauce like hoisin or peanut sauce.
