Ingredients

Cider and Sugar Reduction

  • 1.5 cups apple cider (not vinegar, fermented apple drink)
  • 2 tbsp apple cider (additional cider for reduction)
  • 1/4 cup sugar (coconut, date, or maple syrup)
  • 1 cup flour (mix of whole wheat and all purpose)
  • 1 tbsp almond flour (or more flour)
  • 3/4 tsp cinnamon
  • 1/8 tsp cardamom or nutmeg
  • dash black pepper
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tbsp oil or applesauce (or both for moisture)
  • 1 tbsp cane sugar
  • 1 tbsp coconut sugar or brown sugar
  • 1/2 tsp cinnamon

Instructions 

  • Reduce 1.5 cups cider and 2 tbsp sugar in a saucepan over medium heat for 20-25 mins; cool to room temp.
  • Mix dry ingredients in a bowl. Add concentrated cider and oil/applesauce; mix until combined. Adjust batter consistency with non-dairy milk or flour if needed.
  • Spoon batter into greased or lined donut/muffin pan, smoothing the tops.
  • Bake at 350°F (180°C) for 11-12 mins for donuts or mini muffins, 20-22 mins for regular muffins. Cool for 5 mins and remove from pan.
  • Mix cinnamon sugar in a ziplock or shallow bowl. Brush donuts with non-dairy milk or oil, then shake or dip in sugar mixture.

Ensure cider is reduced properly for best flavor and texture.
