Juicy baked chicken thighs coated with a flavorful spice rub and smoky barbecue sauce, finished with a crispy skin.

Ingredients

Chicken

  • 4 pounds bone-in and skin-on chicken thighs (approximately 8 pieces)
  • 0.25 cup spice rub (see recipe below)
  • 1.5 cups prepared barbecue sauce (e.g., Sweet Baby Ray’s)
  • 3 tablespoons brown sugar
  • 3 tablespoons smoked paprika
  • 2 tablespoons chili powder
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 1 tablespoon dry mustard
  • 1 tablespoon cumin
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Instructions 

  • Preheat oven to 400°F (200°C). Prepare a baking sheet with foil and oil.
  • Mix spices to make the rub, set aside ¼ cup for later.
  • Pat chicken dry, place skin side down, and sprinkle with 2 tbsp spice rub.
  • Flip chicken, coat with remaining 2 tbsp spice rub, then bake 15 minutes.
  • Brush ⅓ of barbecue sauce on both sides, bake 15 minutes, repeat twice, then add final sauce and check for doneness.
  • Optional: broil 1-2 minutes for crispy skin, then rest 5 minutes before serving.

Notes

Ensure chicken reaches 165°F (74°C) internal temperature for safety.
