Instructions
Preheat oven to 350°F (180°C). Place Brie in a dish, score top, drizzle with olive oil, and insert thyme sprigs.
Wrap garlic head in foil, drizzle with olive oil, and bake alongside Brie for 25-30 minutes.
While baking, melt butter and cook apples until soft, then stir in 1 tablespoon honey and a pinch of sea salt.
Toast nuts in a dry skillet until golden, then set aside.
Remove Brie from oven, squeeze out roasted garlic, top with apples, drizzle honey, sprinkle nuts, and serve with bread or crackers.
