Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
Pulse cornflakes, parmesan, paprika, onion powder, garlic powder, and salt in a food processor or crush in a bag. Place crumbs in a shallow bowl.
Beat eggs, coat chicken, then dredge in crumbs. Place on baking sheet, drizzle with olive oil, and bake for 20-25 minutes until crispy.
Combine maple syrup, Dijon, hot sauce, chili powder, onion powder, garlic powder, and salt in a saucepan. Warm and stir in thyme.
Drizzle sauce over baked chicken, garnish with herbs, and serve.
Notes
For extra crispiness, double coat the chicken.
