A deliciously crispy baked chicken coated in crunchy cornflakes and glazed with a sweet and tangy maple Dijon sauce, perfect for a flavorful dinner.

  • 6 cups cornflakes (use gluten free if needed)
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 2 large eggs (beaten)
  • 2 tablespoons hot sauce
  • 2 pounds chicken breast tenderloins
  • extra virgin olive oil for drizzling
  • 1/3 cup maple syrup
  • 1/4 cup Dijon mustard
  • 2-3 tablespoons hot sauce
  • 3/4 teaspoon chipotle chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon fresh thyme

Instructions 

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
  • Pulse cornflakes, parmesan, paprika, onion powder, garlic powder, and salt in a food processor or crush in a bag. Place crumbs in a shallow bowl.
  • Beat eggs, coat chicken, then dredge in crumbs. Place on baking sheet, drizzle with olive oil, and bake for 20-25 minutes until crispy.
  • Combine maple syrup, Dijon, hot sauce, chili powder, onion powder, garlic powder, and salt in a saucepan. Warm and stir in thyme.
  • Drizzle sauce over baked chicken, garnish with herbs, and serve.

Notes

For extra crispiness, double coat the chicken.
