5cupsButternut Squash(about 1 large butternut squash)
1/2cupOlive Oil(plus more for drizzling)
2hefty pinchesKosher Salt(just shy of 1/2 tsp)
1hefty pinchRed pepper Flakes(optional)
8ozFeta Cheese
1lbPasta(such as rotini, orzo, or ditalini)
10leavesFresh Sage(minced)
3clovesGarlic(finely minced)
1tbspHot Honey(regular honey is fine too)
to tasteFresh Cracked Black Pepper
Instructions
Preheat oven to 400°F (200°C). Toss butternut squash with olive oil, salt, and pepper. Place in a baking dish with feta in the center. Drizzle feta with oil, red pepper flakes, and pepper. Bake for 30 minutes.
After 30 minutes, remove from oven, stir in garlic, sage, and honey. Increase oven temperature to 450°F (230°C) and bake for another 5-10 minutes until feta is browned.
Cook pasta in salted boiling water until al dente. Drain, reserving 2 cups of pasta water.
Remove feta from oven, stir in pasta and 1 cup of reserved pasta water. Mix until creamy, adding more water if needed. Season with salt, pepper, and hot honey to taste.
Notes
For extra flavor, garnish with additional sage or a drizzle of olive oil before serving.
