Enjoy these warm, spiced pumpkin donut holes baked to perfection and coated in cinnamon sugar for a delightful treat.

Ingredients

Dry ingredients

  • 1 1/2 cups all purpose flour
  • 1/3 cup packed light brown sugar
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp pumpkin pie spice
  • 1/4 tsp kosher salt
  • 1 large egg
  • 3/4 cup pumpkin puree (NOT pumpkin pie filling)
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 2 Tbsp unsalted butter (melted)
  • 1/2 cup unsalted butter (melted)
  • 1 1/2 cups granulated sugar
  • 1 1/2 tsp ground cinnamon

Instructions 

  • Preheat oven to 375°F (190°C). Spray a mini muffin tin with cooking spray.
  • Mix dry ingredients (flour, brown sugar, baking powder, pumpkin pie spice, salt) in a bowl.
  • Whisk egg, pumpkin puree, milk, and vanilla in a large bowl. Combine with dry ingredients and melted butter.
  • Scoop batter into muffin cavities and bake for 10-12 minutes. Cool on a wire rack.
  • Mix sugar and cinnamon. Dip cooled donut holes in melted butter, then coat in cinnamon sugar.
