Instructions
Preheat oven to 375°F (190°C). Spray a mini muffin tin with cooking spray.
Mix dry ingredients (flour, brown sugar, baking powder, pumpkin pie spice, salt) in a bowl.
Whisk egg, pumpkin puree, milk, and vanilla in a large bowl. Combine with dry ingredients and melted butter.
Scoop batter into muffin cavities and bake for 10-12 minutes. Cool on a wire rack.
Mix sugar and cinnamon. Dip cooled donut holes in melted butter, then coat in cinnamon sugar.
