These healthy banana oatmeal cookies are quick to make and perfect for a nutritious snack or dessert.

Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment.
Mash bananas in a large bowl. Add honey, egg, and vanilla; stir well.
Mix in oats, cinnamon, and salt until combined. Fold in chocolate chips if desired.
Drop spoonfuls onto prepared baking sheets, spacing about 2 inches apart.
Bake for 12-15 minutes until tops are set and bottoms lightly browned. Cool for 5 minutes.
Serve warm or at room temperature.
Notes
For added flavor, try mixing in nuts or dried fruit.
