These healthy banana oatmeal cookies are quick to make and perfect for a nutritious snack or dessert.

Ingredients

Bananas

  • 3 pieces bananas (overripe) (about 1 ¼ cups mashed banana)
  • 2 tablespoons honey (or maple syrup)
  • 1 egg egg
  • 1 teaspoon pure vanilla extract
  • 1.5 cups quick cooking oats
  • 1 tsp ground cinnamon
  • 0.25 tsp fine sea salt
  • 0.5 cup chocolate chips (or other add ins like shredded coconut, dried cranberries, raisins, etc.)

Instructions 

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment.
  • Mash bananas in a large bowl. Add honey, egg, and vanilla; stir well.
  • Mix in oats, cinnamon, and salt until combined. Fold in chocolate chips if desired.
  • Drop spoonfuls onto prepared baking sheets, spacing about 2 inches apart.
  • Bake for 12-15 minutes until tops are set and bottoms lightly browned. Cool for 5 minutes.
  • Serve warm or at room temperature.

Notes

For added flavor, try mixing in nuts or dried fruit.
