Ingredients

Protein

  • 1 tbsp neutral cooking oil (for skillet cooking)

Base & Vegetables

  • 4 cups cooked rice (white, jasmine, brown, or other)
  • 2 cups cabbage (thinly sliced or shredded)
  • 1 cup cucumber (sliced or diced)
  • 1 cup shredded carrots
  • 2 green onions sliced
  • 1/2 cup mayonnaise, Greek yogurt, or a combination (creamy base)
  • 1/3 cup sweet chili sauce
  • 2 tbsp sriracha or hot sauce (adjust to taste)
  • 1 tbsp rice vinegar or lime juice
  • 1 tbsp sesame seeds (optional)
  • 1 lime cut into wedges (optional)

Instructions 

  • Cook rice according to package instructions; let cool if meal prepping.
  • Season chicken with garlic powder, paprika, black pepper, and salt. Cook in skillet with oil until browned and fully cooked.
  • Mix creamy base, sweet chili sauce, sriracha, and lime juice to make the bang bang sauce.
  • Prepare vegetables separately; keep fresh until serving.
  • Assemble bowls with rice, chicken, vegetables, and sauce. Garnish with sesame seeds and lime wedges if desired.
