Ingredients

Chicken

  • 1.5 lbs boneless, skinless chicken breasts or thighs (cut into 1 to 1.5-inch chunks)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder (optional)
  • ½ teaspoon smoked paprika (optional)
  • 8-10 skewers skewers (wooden or metal) (soak wooden skewers in water if using)
  • ½ cup mayonnaise (or use ¼ cup mayo + ¼ cup Greek yogurt for a lighter option)
  • 2 tablespoons sriracha (adjust to taste)
  • 1 tablespoon honey (or sugar)
  • 1 tablespoon rice vinegar (or lime juice)
  • 1 tablespoon chopped green onions
  • 1 teaspoon sesame seeds

Instructions 

  • Thread chicken chunks onto skewers.
  • Mix olive oil, salt, pepper, garlic powder, and smoked paprika; brush onto chicken.
  • Grill skewers until cooked through, about 8-10 minutes.
  • Combine mayonnaise, sriracha, honey, and rice vinegar to make sauce.
  • Brush sauce onto cooked chicken skewers and garnish with green onions and sesame seeds.

Notes

Soak wooden skewers in water for at least 30 minutes to prevent burning.
