Ingredients

Flatbreads

  • 2 pieces large flatbreads (store-bought or homemade)

Chicken

  • 1 cup cooked shredded chicken

Sauce

  • 0.5 cup BBQ sauce

Cheese

  • 1 cup shredded mozzarella cheese

Vegetables

  • 0.5 medium red onion (thinly sliced)
  • 0.5 cup corn kernels (fresh or frozen)

Herbs

  • 0.25 cup fresh cilantro (chopped)

Other

  • 1 tablespoon olive oil
  • to taste salt and pepper

Instructions 

  • Preheat oven to 425°F (220°C).
  • Mix shredded chicken with BBQ sauce.
  • Place flatbreads on a baking sheet, drizzle with olive oil.
  • Spread chicken mixture on flatbreads, top with cheese, onion, and corn. Season with salt and pepper.
  • Bake for 10-12 minutes until cheese is bubbly and golden. Garnish with cilantro before serving.

Notes

For extra flavor, add a drizzle of honey or hot sauce before serving.
