Ingredients

Protein

  • 1.5 pounds boneless, skinless chicken breasts
  • 2 tablespoons olive oil, divided
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Grains

  • ¾ cup uncooked quinoa, rinsed
  • 1.5 cups chicken broth

Vegetables & Sauces

  • 0.5 cup BBQ sauce (store-bought or homemade)
  • 0.5 cup ranch dressing
  • 1 cup cherry tomatoes, halved
  • 1 medium avocado, diced
  • 0.5 cup corn kernels (fresh, frozen or canned)
  • 0.25 cup red onion, finely diced
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime cut into wedges

Instructions 

  • Mix spices, rub on chicken, and let sit 15-20 minutes.
  • Toast quinoa in a saucepan, then cook with chicken broth for 15-18 minutes.
  • Grill chicken until cooked through, brushing with BBQ sauce in last 2 minutes. Rest and slice.
  • Divide quinoa into bowls, top with chicken, tomatoes, avocado, corn, and onion.
  • Drizzle with remaining BBQ sauce and ranch, garnish with cilantro, serve with lime wedges.

Notes

For extra flavor, marinate chicken longer or add your favorite toppings.
