Instructions
Mix spices, rub on chicken, and let sit 15-20 minutes.
Toast quinoa in a saucepan, then cook with chicken broth for 15-18 minutes.
Grill chicken until cooked through, brushing with BBQ sauce in last 2 minutes. Rest and slice.
Divide quinoa into bowls, top with chicken, tomatoes, avocado, corn, and onion.
