A flavorful and healthy rice bowl featuring seasoned beef, cauliflower rice, and fresh vegetables, perfect for a quick lunch or dinner.

Ingredients

Spice Mixture

  • 1 t lemon juice
  • ¼ t chili powder
  • ¼ t dried oregano
  • ¼ t garlic powder
  • to taste sea salt
  • 2 T olive oil (divided)
  • ½ lb beef sirloin steak
  • 1 clove garlic (minced)
  • 2 cups cauliflower rice
  • 2 T chopped fresh parsley
  • 2 radishes sliced
  • 6 cherry tomatoes halved
  • ½ red onion sliced
  • ½ avocado sliced

Black pepper

  • to taste black pepper

Instructions 

  • Combine lemon juice, chili powder, oregano, garlic powder, salt, and 1 tablespoon olive oil. Rub onto steak.
  • Cook steak in skillet 3 minutes per side; set aside to rest.
  • Heat remaining olive oil, cook garlic 30 seconds, add cauliflower rice and salt; cook 5 minutes. Stir in parsley.
  • Slice steak. Assemble bowls with cauliflower rice, steak, radishes, tomatoes, onion, and avocado. Season with salt and pepper.
