Beef and Rice with Veggies

A hearty and flavorful one-pot meal combining ground beef, rice, and fresh vegetables, perfect for a quick dinner.

Ingredients

Oil

  • 2 tbsp olive oil

Vegetables

  • 1 piece onion (diced)
  • 1 large red capsicum bell pepper (diced)
  • 2 cloves garlic (minced)

Meat

  • 500 g ground beef mince (lean)

Tomato paste

  • 2.5 tbsp tomato paste

Salt and Spices

  • 1.25 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp cumin
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 0.25 tsp cayenne pepper (optional)

Bay leaf

  • 1 piece dried bay leaf

Rice

  • 1.25 cups long grain white rice (uncooked)

Broth

  • 2 cups beef broth (low sodium)

Frozen Veggies

  • 2 cups diced frozen veggies (corn, pea, carrot mix)

Leafy Greens

  • 3 big handfuls baby spinach (or other leafy greens)

Instructions 

  • Heat oil in a large pot over high heat. Add onion, capsicum, and garlic; cook for 1 minute.
  • Add beef, cook until browned, breaking it up. Stir in tomato paste, salt, pepper, onion powder, oregano, cumin, and cayenne; cook for 1 minute.
  • Reduce heat to medium. Add rice and broth, stir in frozen veggies and bay leaf. Cover and simmer for 12-15 minutes until liquid is absorbed.
  • Remove from heat, add spinach, cover, and let rest for 10 minutes. Fluff with a fork and serve.

Notes

For extra flavor, add a squeeze of lemon or a sprinkle of cheese before serving.
