Instructions
Heat oil in a large pot over high heat. Add onion, capsicum, and garlic; cook for 1 minute.
Add beef, cook until browned, breaking it up. Stir in tomato paste, salt, pepper, onion powder, oregano, cumin, and cayenne; cook for 1 minute.
Reduce heat to medium. Add rice and broth, stir in frozen veggies and bay leaf. Cover and simmer for 12-15 minutes until liquid is absorbed.
Remove from heat, add spinach, cover, and let rest for 10 minutes. Fluff with a fork and serve.
Notes
For extra flavor, add a squeeze of lemon or a sprinkle of cheese before serving.
