Instructions
Add all ingredients to the slow cooker, combining chuck roast, onions, garlic, chilies, spices, and liquids.
Whisk together beef broth, vinegar, and lime juice; pour over ingredients. Add bay leaves.
Cook on LOW for 6-8 hours until beef is tender and shreddable.
Shred beef with forks, then stir back into the slow cooker to combine flavors.
Garnish with chopped cilantro or parsley and serve.
