A flavorful and tender slow cooker beef dish with smoky spices and fresh lime, perfect for tacos or bowls.

Ingredients

Meat

  • 3 to 4 pounds chuck roast (cut into 6 to 8 pieces)
  • 1 large yellow onion (diced)
  • 4 cloves garlic (minced)
  • 1 can (4-ounces) green chilies
  • 2 chipotles in adobo diced
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1.5 teaspoons salt
  • 0.75 teaspoon fresh ground black pepper
  • 0.5 cup beef broth (try to use low-sodium beef broth whenever possible)
  • 2 tablespoons apple cider vinegar
  • juices from 2 limes lime juice
  • ΒΌ cup chopped fresh cilantro or parsley (for garnish)

Instructions 

  • Add all ingredients to the slow cooker, combining chuck roast, onions, garlic, chilies, spices, and liquids.
  • Whisk together beef broth, vinegar, and lime juice; pour over ingredients. Add bay leaves.
  • Cook on LOW for 6-8 hours until beef is tender and shreddable.
  • Shred beef with forks, then stir back into the slow cooker to combine flavors.
  • Garnish with chopped cilantro or parsley and serve.
