Ingredients

Meat and Beans

  • 1 pound ground beef (Use fresh for best flavor.)
  • 1 cup onion, chopped (Chop coarsely for texture.)
  • 1 ounce taco seasoning (One packet or 2 tablespoons.)
  • 16 ounces refried beans (Approximately 2 cups.)
  • 10.5 ounces condensed cream of chicken soup (Undiluted; can substitute cream of mushroom or celery.)
  • ¾ cup sour cream (For creaminess.)
  • 10 large flour tortillas (Cut in half.)
  • 2 cups mild cheddar cheese, shredded (For melty texture.)
  • 1 cup pepper jack cheese, shredded (Adds gentle heat.)
  • ¼ cup cilantro, chopped (Use fresh for brightness.)
  • 1 lime lime (Squeeze for flavor.)

Instructions 

  • Cook ground beef with chopped onion and taco seasoning until browned.
  • Mix cooked beef, refried beans, and cream of chicken soup in a bowl.
  • Spread mixture in a casserole dish, top with shredded cheeses, and bake at 375°F (190°C) for 20-25 minutes.
  • Remove from oven, sprinkle chopped cilantro, and squeeze lime juice over the top before serving.

Notes

For a spicier version, add jalapeños or hot sauce.
