Ingredients

Meat and Dairy

  • 1 pound ground beef
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese

Vegetables and Canned Goods

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (15 oz) black beans, drained and rinsed

Spices and Seasonings

  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon pepper

Other

  • 8 corn tortillas corn tortillas

Instructions 

  • Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  • Cook ground beef with diced onion and garlic until browned; drain excess fat.
  • Add enchilada sauce, tomatoes, beans, cumin, chili powder, salt, and pepper; simmer 5 minutes.
  • Layer 4 tortillas in dish, spread half beef mixture, sprinkle half cheeses. Repeat layers.
  • Bake 25 minutes until bubbly and browned. Rest a few minutes before serving.

Notes

For a spicier version, add chopped jalapeños or hot sauce.
