Instructions
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
Cook ground beef with diced onion and garlic until browned; drain excess fat.
Add enchilada sauce, tomatoes, beans, cumin, chili powder, salt, and pepper; simmer 5 minutes.
Layer 4 tortillas in dish, spread half beef mixture, sprinkle half cheeses. Repeat layers.
Bake 25 minutes until bubbly and browned. Rest a few minutes before serving.
Notes
